Our Bendigo grower prides himself on providing fruit with intense concentration and depth of flavour. He achieves this through dry grown low yielding vines. The fruit is hand harvested and whole berry fermented, held on skins for up to 7 days post fermentation and undergoes malolactic fermentation in barrels. The Cabernet sauvignon is blended to add some structure and blue fruited imprint – the result is a wine with ripe sweetness, mid palate intensity and soft round tannins holding everything together.
